Apple Protein Pancakes with Cottage Cheese
Soft and fluffy Apple Protein Pancakes made with oats, cottage cheese, eggs, and fresh apples. An easy, high-protein breakfast topped with skyr, protein powder, and fresh fruit.

Ingredients
- •200 g rolled oats
- •2 eggs
- •100 g egg whites
- •350 g cottage cheese, I personally used 2% cottage cheese, but you can use any cottage cheese you prefer.
- •400 g apples
- •10 g baking powder
- •sweetner , to taste
- •cinnamon, to taste
- •pinch of salt
For the topping
- •Skyr/quark
- •protein powder
- •fresh fruit
Instructions

Peel and finely grate the apples.

Add the oats, eggs, egg whites, and cottage cheese a blender.

Blend until you have a smooth, thick batter.

Add the grated apples to the batter and mix well until evenly combined.

Add the baking powder, pinch of salt, sweetener, and cinnamon, then mix again.

Let the batter rest for a few minutes so the oats can absorb some of the moisture.

Heat a non-stick pan over medium heat.

Spoon small portions of the batter into the pan to form the pancakes.

Cook for a few minutes on each side, until golden brown and cooked through.

For the topping, mix skyr or quark with protein powder until smooth and creamy.

Serve the pancakes with the protein topping and fresh fruit of your choice.
